SALSA 13

1 Red Bell Pepper  cut medium dice

1 Green Bell Pepper cut medium dice

1 Yellow Bell Pepper cut medium dice

1 Orange Bell Pepper cut medium dice

1 Jalapeno minced

1 Bunch Green Onion sliced thin

1 cup of Corn

1 Tomatillo cut small dice

6 -8 Large Ugly Tomatoes cut medium dice

Then add to taste…

SEA SALT

CRACK PEPPER

LIME JUICE

CILANTRO

Better yet wash and remove the non edible parts then just throw it all in a robo coup. You can also roast it. The longer it sits the better it gets. Put out a bottle of hot sauce on the side. Can be used in all sorts of stuff….stuff chicken,  make a soup, turn it into salad dressing…

1  CUP  GOLDEN RAISINS

1  CUP pitted OLIVES

1  SHALLOT

Process it to your liking.

Better the next day, refridgerate in a jar with lid. Let rest at room temp for 10 minutes to take off the chill before use.

Now smear it on a cuban sandwhich and weigh it down with a brick, a skillet, a sleeping child…really, I am not picky…
